Recipe By : Women's Day-Eating Light

2 teaspoons olive oil
2 tablespoons chopped pancetta or Canadian Bacon
1 small onion -- finely chopped
1 cup long-grain rice
2 cups defatted chicken broth
2 tablespoons dry white wine
2 cups frozen tiny peas -- thawed
3 tablespoons chopped parsley
3 tablespoons grated Parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper
In a large nonstick skillet, over medium heat, heat oil until hot but not smoking. Add pancetta and
onions; saute about 5 minutes, until onion is softened.
Stir rice into skillet. Cook, stirring occasionally, about 3 minutes, until lightly golden; add broth and wine and bring to a boil. Reduce heat; cover and simmer 15 minutes.
Remove from heat; stir in peas, parsley, Parmesan, salt, and pepper. Let stand, covered, for 5 minutes before serving.
