Creamy Jalapeno Dressing
3/4 cup plain yogurt
2 cloves garlic
1 small jalapeno pepper, stemmed, seeded, and minced
3 tbsp. chopped fresh coriander (cilantro)
1/2 tsp. ground cumin
salt and freshly ground pepper to taste
Combine all ingredients in a small bowl and let stand for 2 hours before serving. About 1 cup
NOTE: Wear gloves when stripping the seeds and stem from the pepper, or do under running water.
