Texas Cobb Salad

6 lbs. Ziti pasta, cooked
2 cups peas, cooked
3 cups ham
3 cups bacon bits, cooked
1/4 cup jalapeno pepper,fresh
4 cups cheddar cheese, shredded
1 1/2 cups cilantro, fresh
2 cups mayonaise
2 cups sour cream
1/2 cup red onion
1 cup green onion
1/4 cup dry mustard
1/4 cup red wine vinegar
1 TBL. kosher salt
2 cups celery stalk (diced 1/4")
1 1/2 TBL. white ground pepper
1/4 cup Lime juice
1 cup sweet midget pickles


Wash and prepare produce: add peas, chopped jalapenos, finely chopped cilantro, diced red onion, green onion and celery.

Dice ham 1/4" and gather remaining ingredients. Slice sweet pickles

In a bowl, mix dressing: mayo, sour cream, dry mustard, red wine vinegar, kosher salt, lime juice& white pepper. Mix well with a whisk.

Mix the prepared pasta with all of the remaining ingredients and toss in the dressing.
