Canadian Cheddar Soup
1/2 cup margarine
1 lb. carrots, finely chopped
3 ribs of celery, finely chopped
1/2 large onion, finely chopped
1 tsp. each: salt, pepper, paprika
1/2 cup flour
3 qts. chicken stock,hot
2 qts. milk, hot
2 lbs. sharp cheddar cheese; shredded
1 TBSP. Worcestereshire Sauce
In a large pot, over medium-high heat melt margarine.
Add carrots, celery, onion, salt, pepper and paprika. Saute
until all vegetables are very tender, about 10 minutes.
Stirring constantly add flour and cook until golden, about 5
minutes. Continue to stir and add hot stock and the milk.
Cook, stirring,until thickened and smooth,about 15 minutes.
Reduce heat to medium continue to stir and add cheese. Cook until all cheese is melted, about 15 minutes.
Add worcestershire sauce.
