Rae's Tomato Soup
few drops of olive oil
4 Cups chopped tomatoes
1 1/2 Cups chopped onion
1 Cup chopped celery
1/2 Cup chopped green pepper
2 cloves minced garlic
3 tsp. sugar
1/2 Cup chopped zucchini
1/2 Cup margarine
1/2 Cup flour
2 Cups milk
2 Cups chicken stock
2 Tbl. dill weed
2 tsp. basil
1/2 tsp. oregano
1/2 tsp. freshly ground pepper
1 1/2 tsp. salt
1 Tbl. Worcestershire sauce
2 Tbl. tomato paste
Simmer the first 8 ingredients for 20 minutes or 'til tender. Cool a bit then blend until smooth.
Meanwhile, melt margarine and stir in flour. Slowly add 2 Cups milk and 2 Cups chicken stock, stir (with whisk) until smooth and thick (medium heat).
Add dill weed, basil, oregano (all dried) and freshly ground pepper.
Then add salt, Worstershire, tomato paste.
