Butternut Squash Mash
1 butternut squash, peeled, seeded and cut into 2" chunks
Kosher salt and freshly ground black pepper to taste
Butter or margarine
Place squash cubes in large pot and cover with cold water. Bring to a boil and boil gently until squash in easily pierced with the tip of a sharp knife. Drain well and mash, just like potatoes, with seasonings and butter or margarine.
