Sauteed Cucumbers with Chives and Dill
Recipe By: Vegetarian Fast and Fancy
Serving Size: 6
3 medium cucumbers
2 tablespoons butter
2 tablespoons white wine
3 tablespoons chopped chives
1 tablespoon chopped parsley
1/4 teaspoon dry dill weed
salt and white pepper to taste
Peel cucumbers, then cut in half lengthwise. Scoop out the seeds with a spoon and slice the cucumbers, crosswise, into thin slices. In a saucepan, simmer cucumbers with butter and wine until wine is almost evaporated. Add the remaining ingredients and toss mixture to combine. Serves 6.
