Peas with Lettuce and Mint
2 tsp. butter or olive oil
1 cup thinly sliced iceberg lettuce
1 (10 oz.) box small frozen peas
1/3 - 1/2 cup mint jelly
Heat butter or olive oil in small saucepan with tight-fitting lid. Place lettuce in bottom of pan
and top with frozen peas. Cover and cook over med-high heat, shaking pan frequently, until peas are heated through and pot is steaming.
Add jelly and cook, uncovered, until jelly is melted.
Note: You can substitute rosemary jelly for a different taste.
