Sweet Potato Souffle

6 medium sweet potatoes, cooked and peeled
3 eggs, separated
1/2 cup sugar
1/2 cup orange juice
2 teaspoons cinnamon
1/4 teaspon nutmeg
1/4 teaspoon ground cloves


Processor method:
Pre-heat oven to 400 degrees F. Grease a 2-quart souffle dish. Insert plastic blade.

Cut potatoes into quarters and place in work bowl; chop with 4 or 5 quick pulses. Stir with rubber spatula to push the larger chunks down toward the bottom of the bowl.

Add egg yolks, sugar, orange juice, and spices. Process 15 to 20 seconds, scraping down sides of bowl once or twice. The potatoes should be smooth and free of lumps. Remove to a large bowl.

Beat egg whites until stiff. Fold into the potato mixture. Turn into souffle dish and bake for 30 minutes.


Conventional:
Follow processor instructions, mashing the potatoes by hand until very smooth, and beating the egg yolks and remaining ingredients with rotary or electric mixer.

Serves 8 - 10
