Zucchini-Tomato Saute with Feta Cheese
1/2 teaspoon olive oil
1 cup chopped onion
1 clove garlic minced
4 cups sliced zucchini
1/2 teaspoon salt
1/8 teaspoon black pepper, freshly ground
2 cups cherry or grape tomatoes
1 ounce feta cheese, crumbled
2 teaspoons chopped fresh dill
Heat oil in a large nonstick skillet over medium high heat. Add onion and garlic; saute 3 minutes. Add zucchini, salt and pepper; saute 3 minutes. Add tomatoes; saute 4 minutes. Remove from heat. Stir in cheese and dill.
Serves 4
Can be served over pasta.
