Squash: Zucchini Mousseron

Zucchini Mousseron

1 lb zucchini (about 2 med), cut in 1/4" slices
3 c. water
1/2 tsp dill
1/2 lb mushrooms, sliced quite thin
3 TB butter or margarine or olive oil
1 TB flour
1 TB of the broth the zucchini has been cooking in
3/4 c. sour cream (lite is fine)


Simmer zucchini in water with dill for about 8 minutes or until crisp-tender. In a skillet sauté mushrooms in butter. Combine flour, broth and sour cream, mixing well. Stir into mushrooms.Drain zucchini well, and stir into sour cream mixture. Serves 6
