Zucchini Mom’s Way
1 or 2 large cloves garlic, minced
1 Tbl. oil
thinly sliced zucchini
1 (8 oz.) can tomato sauce
dash of red wine
sprinkle of Italian herbs
Parmesan Cheese
Brown galic in oil in a saucepan.
Add zucchini; cook and stir until softened.
Add tomato sauce, wine and Italian herbs.
Simmer, covered, until tender.
Sprinkle with Parmesan when ready to serve.
