Zucchini Moussaka
3 zucchini squash, cut in
1/4-inch slices
1 onion, sliced
2 Tbsp. oil
1 lb. ground beef
1 (8 oz.) can tomato sauce
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. cinnamon
1 cup cottage cheese
1 egg, slightly beaten
1/4 cup Parmesan cheese
Preheat oven to 350 degrees F.
In a skillet, brown zucchini and onions lightly in oil;
remove from skillet and place in bottom of shallow baking dish.
In same skillet, brown beef; pour off fat. Stir in tomato
sauce, garlic, salt and cinnamon; spoon over zucchini and
onion.
Blend egg and cottage cheese; spoon over meat.
Sprinkle Parmesan cheese over cottage cheese.
Bake at 350 degrees for
30 minutes.
Serves 6.
