CARROT KISHKA

2 cups carrots, packed grated (about 7)

1/2 small onion, grated

1/2 teaspoon salt

1 cup matzo meal

1 stick margarine, melted
Combine all ingredients. Place on a sheet of foil and shape into a loaf.
Fold the foil around the loaf and twist ends closed. Bake on cookie sheet
at 400 degrees for 1 hour. If making in advance, leave in wrapped foil,
cool, and place entire package in plastic bag for freezing. On day of the
Seder bring to room temperature and reheat at 400 degrees for 15 or 20
minutes. Slice, serve and enjoy.
