WEST AFRICAN OKRA STEW
okra
spinach
tomatoes
onions
palm oil
cayenne pepper
salt to taste
To a stew pot, add oil. When oil has melted, add onions, tomatoes,
cayenne pepper and salt. Cook until onions
and tomatoes are soft.
Add chopped okra, spinach and small amount of water (1 tablespoon). Cook
until soft or well done.
Serve over rice or potatoes. If fish is desired, add 15 minutes before
stew is done.
