Brushcetta Kabobs

Can be made ahead and baked before serving. It is good at room temperature too.

12 slices country bread 1/2 inch thick
3 T olive oil, extra virgin
8 oz mozzarella cheese, 1/4 inch thick slices (use fresh mozzarella)
3 plum tomatoes, sliced into 1/4 inch thick slices
1/2 cup basil leaves
Salt and Pepper
Parmesan Cheese Shredded finely
16 wooden skewers, soaked in water


Preheat oven to 425. Trim crust from bread and quarter slices. Brush all sides with olive oil and put on baking sheet in oven for 5 minutes so all sides are golden but not browned. Remove.

Make 16 stacks layering:
Bread
Cheese
Tomato
Basil leaf
Salt and Pepper
Repeat ending with bread

Skewer stacks and put on baking sheet and drizzle with more olive oil and sprinkle with Parmesan cheese.

Bake or grill 10 15 minutes til golden brown and cheese is melted Garnish with more basil leaves an fresh parsley
