Red Pepper Bruschetta with Feta

1 jar (7oz) roasted red peppers, drained and chopped
1 clove garlic, minced
olive oil
1 tsp. lemon juice
1/4 C chopped green onion
1 pkg. (4oz) crumbled feta cheese (finely chop if necessary)
1 loaf French bred, cut into 1/2-inch slices

Mix peppers, garlic, 1 Tbsp. olive oil, lemon juice, onions and feta. Set aside. If desired, brush bread slices with olive oil and place under the broiler until lightly toasted. For a little fancier presentation, buy French bread dough and bake it in different shaped bread molds (like from Pampered Chef). This bruschetta is very refreshing tasting. You could make everything the day before, even slice the bread and keep it in a ziplock bag or tupperware container until ready to serve.
