Bruschetta
6 plum tomatoes...chopped finely
2 teaspoons of chopped garlic
fresh cracked black pepper
Salt to taste
1/2 cup olive oil
2 loaves french bread (bagettes are best)
whole clove of garlic
Mix together the chopped tomatoes, garlic, salt and fresh ground pepper.
Pour 1/4 cup of olive oil over tomato mixture and gently toss together.
Slice bread on the diagonal in thin slices, approx 1/2 inch thick. Toast slices, rub with clove of garlic.
Place a spoonful of tomato mixture onto toasted slice of bread.
Another way to serve this is to toast the bread...brush with olive oil and set on plate with tomato mixture in middle of plate and let people put their own tomatoes on top of toasted bread.
