Caraway Cheese Balls

1 1/2 c. butter, softened
1/2 lb. sharp Cheddar cheese, grated, softened
3 c. flour
1/2 tsp. salt
1/2 tsp. cayenne pepper
2 Tbsp. caraway seed
1 c. finely chopped pecans

Preheat oven to 375º F.

In large bowl, blend butter and grated cheese. Blend in half of flour (1 1/2 cups). Add remaining flour, seasonings, caraway and pecans. Blend thoroughly.

Shape dough in 1-inch balls and place on ungreased cookie sheet.

Bake for 15 to 18 minutes.

Serve hot or store in an airtight container. Do not cover until completely cool. These cheese balls store well for several weeks in sealed containers.
They can also be frozen before cooking.

Yields 30 (1-inch) balls.
