Cheese Cookies

1 lb. butter (or 1/2 lb butter, 1/2 lb margarine)
1 lb. American or sharp Cheddar cheese
4 c. flour
dash red pepper and salt
powdered sugar
1 c. pecan halves or walnuts


Grate cheese, cream with shortening and flour gradually. Season as desired with red pepper and salt. Roll dough and refrigerate overnight.

Cut slices and bake 10 minutes at 375 degrees. Roll in powdered sugar, press nuts on top.



Cheese Cookies

2 1/2 c. flour
8 oz. sharp Cheddar cheese
1 c butter or margarine
1 c. chopped pecans
salt
red pepper


Soften and blend together cheese and butter. Add other ingredients. Form into 4 rolls and wrap in foil; freeze.

Thaw slightly and slice into 1/4-inch slices. Bake at 375 degrees about 15 minutes.



Cheese Appetizer Cookies

4 oz. (1 c.) shredded sharp Cheddar cheese
1/2 c. butter, softened
1 c. flour
1/2 tsp. salt
dash of ground red pepper


Heat oven to 375 degrees.

In medium bowl combine all ingredients. Mix thoroughly; chill 1 hour.

Shape into 1-inch balls. Place on ungreased cookie sheet; flatten with tines of fork. Bake at 375 degrees for 10 to 12 minutes or until edges are slightly brown. Cool slightly before removing from sheet.

Makes 24 cookies.
