Mai's Cheese Straws
Makes approximately 18 long straws

1/2 pound frozen puff pastry, defrosted
1 tablespoon Dijon-style mustard
3 tablespoons finely grated fresh Parmesan cheese
1/2 teaspoon sweet paprika


On a lightly floured work space, roll out the puff pastry to approximately 12 x 14 inches. Paint the lower half of the pastry with the mustard, and sprinkle with the cheese and paprika. Fold the top end of pastry over to cover the bottom, and press the dough together. Roll the dough back to a 12 x 14 inch rectangle and chill for 30 minutes.

Preheat the oven to 400 degrees F. and line a baking pan with parchment paper.

With a pizza wheel, cut the dough into strips about a 1/2-inch wide. Twist the strips into long corkscrews, and place the twists on the baking pan. Press the ends to the rim of the pan to help prevent the twists from unraveling during the cooking. Chill for 10 minutes.

Bake the twists for 15 minutes, or until golden brown. Trim the ends and cool on a rack. Store in a tightly sealed container for up to 2 days
