Marinated Cheese
1/2 cup olive oil
1/2 cup white wine vinegar
2 oz. jar diced pimiento, drained
1 Tbs. dried parsley
3 Tbs. minced Vidalia onions
3 garlic cloves, minced
1 tsp. sugar
3/4 tsp. dried basil
1/2 tsp. salt
1/2 tsp. pepper
8 oz. block sharp cheddar, chilled
8 oz. block cream cheese, chilled very well
Combine 1st 10 ingredients in a jar and mix well.
Cut cheddar in half lengthwise and then into 1/4" squares. Do the same with the cream cheese.
Arrange slices alternately in rows. (the length of rows and how many depend on your container). Pour marinade over cheese and let marinate for at least 8 hours.
Place on serving platter and pour marinade over top. Serve with crackers.
