Marinated Cheese

Step One:
1/2 cup olive oil
1/2 cup white wine vinegar
3 T chopped fresh parsley
3 T minced green onions
1 teaspoon sugar
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
3 cloves garlic, minced
1 (2-ounce) jar pimiento, drained

Step Two:
1 (8-ounce) block cream cheese, chilled
1 (8-ounce) block medium cheddar cheese, chilled

Combine all but cheese in a jar; cover tightly, and shake vigorously.

Set aside.

Cut cream cheese in half lengthwise. Cut crosswise into 1/4 " slices.

Cut and trim Cheddar into equal number of 1/4 inch slices, same size as cream cheese slices.

Stand cheese slices on their edges in shallow dish, alternating types of cheese and pour marinade over cheese.

Cover with plastic wrap and marinate in refrigerate at least 8 hours.

To serve: Transfer cheese to serving platter with a slight lip. Spoon marinade over cheese.

Serve with crackers
