Three Cheese Quiche Bites

36 Ritz crackers, finely crushed ( about 1-1/2 cups of crumbs)
3 Tbsp. of butter, melted
1/2 cup of roasted red peppers, chopped
4 eggs
3/4 cup of milk
1/2 cup of Grey Poupon Dijon Mustard
1/4 cup of chopped, fresh parsley
1 (8 ounce) package of shredded Mozzarella cheese, divided
1/4 cup of Di Giorno shredded Pecorini Romano Cheese

Mix the cracker crumbs and butter; press into the bottom of a greased 9x13x2 inch pan. Bake at 350°F for 8-10 minutes or until golden brown. Remove from the oven and let stand for 5 minutes.

Sprinkle 1 cup of the mozzarella cheese over the crust. Top with the red peppers and remaining mozzarella cheese.

Beat eggs, milk, mustard and parsley in a medium bowl with a wire whisk until blended. Pour evenly over the cheese in the pan. Sprinkle with the Pecorini Romano cheese.

Bake at 350°F. for 30 to 35 minutes or until set. Let stand for 10 minutes. Cut into 2x1-1/2 inch squares. Serve warm.
