Barbecued Chicken Wings

1/2 cup hoisin sauce
3 tablespoons soy sauce
3 tablespoons rice wine or Scotch
3 tablespoons sugar
2 tablespoons ketchup
2 tablespoons minced garlic
3 pounds chicken wings

Prepare wings by halving at the joint and cutting off tips.

In a bowl, whisk together the hoisin sauce, soy sauce, rice wine, sugar, ketchup and the garlic. Add the wings to the sauce. Toss mixture to coat the wings in sauce. Chill, covered, stirring occasionally, overnight.

Arrange the wings, skin-side down, on a baking sheet large enough to hold them in one layer and bake them in the lower third of a preheated 375° F. for 20-25 minutes. Turn the wings and bake them for 20 minutes more. Serve hot, or at room temperature on a platter.
