Chicken Cucumber Canapes
2 8 ounce packages cream cheese
3/4 cup reduced fat mayo
3 cups diced cooked chicken
3/4 cup peeled, seeded and diced cucumber
3 celery ribs diced
1/2 cup diced red bell pepper
6 green onions
1 tsp garlic salt
1/2 tsp salt
1/2 tsp ground pepper
84 white or wheat or both sandwich slices
Stir together cream cheese and mayo until well blended.
Stir in chicken and next 7 ingredients.
Cover and chill for 4 hours.
Cut bread slices with asssored cookie cutters reserving trimmings for
other uses.( bread crumbs, bread salads etc.)
Spread half of bread shapes with chicken mixture and top with matching
bread shape.
Roll sandwich edges in chopped parsley.
