Chicken liver spread
1/2 cup butter
3 cups Spanish onions - chopped
1 lb chicken livers
2 hard-boiled eggs
1/4 cup fresh parsley - chopped
1/4 cup mayonnaise
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
2 tablespoons fresh parsley, extra - chopped
Melt butter in a large heavy skillet.
Add onions and chicken livers and saute, stirring until livers are slightly browned.
Cool slightly, then drain off any juices.
Combine liver and onions with eggs and parsley in a food processor and blend until smooth.
Mix in the mayonnaise, salt, pepper and Worcestershire sauce.
Pour pate mixture into a bowl and chill overnight.
