Chopped Chicken Liver
4 T. butter
3 medium onions, chopped
1 lb fresh chicken livers, cleaned
4 large eggs, hard-boiled
salt and pepper to taste
Heat the butter in a skillet. Add the onions and saute over low heat until caramelized, about 25 minutes.
Raise the heat. Add the chicken livers, turning occasionally, until they are cooked through, but still slightly pink inside.
Chop together the onion-liver mixture and the eggs using a manual chopper or a food processor until finely chopped, but not pureed. Season with salt and pepper.
Put in a serving bowl and garnish with minced onion.
