1 large onion, chopped and carmelized
oil for frying
1 lb. chicken livers
3 eggs, hard boiled
2 T schmaltz
Caramelize onions first by cooking over med. high heat with enough oil to keep from sticking.
Cook liver in boiling water, or broil (I broil), just until done. DO NOT OVERCOOK.
Put through grinder along with eggs. Mix with salt and pepper to taste, and schmaltz. Beat on mixmaster until smooth and fluffy. (This makes the liver very light and fluffy). If too dry, add schmaltz.
