Crostini
Use a dense bread, rustic Italian or rye or some other dense bread.
Cut 3/4 inch thick slices and lightly grill or broil on each side. Don't make
them too brown.. you don't want them hard. Rub each piece with a clove of garlic.
Now you can add the following:
a) Shavings of Romano or Reggino cheese drizzled with extra virgin olive oil
b) Roasted peppers, salt, pepper, and drizzled with extra virgin olive oil
c) Thinly sliced mozzerella cheese, thyme, leaves of basil, drizzeled with olive oil
d) chopped fresh tomato with fresh basil leaves, salt and pepper,drizzled with olive oil
e) Goat cheese drizzled with olive oil, salt, pepper, and sprinkled with thyme
f) Provolone cheese, put under broiler until lightly melted, drizzle with olive oil
g) spread with black olive paste, olive oil and pepper (you can just process the olives until fine, add olive oil, grated rind of lemon, pinch of red pepper flakes.
