Dip Chile con Queso

Chile con Queso

2 TBSP vegetable oil
1 large onion, minced
2 cloves garlic, minced
2-4 fresh jalapeno peppers, minced
4-6 fresh anaheim chili peppers, minced
2 cups diced, seeded tomatoes
1 can evaporated milk
6 cups shredded pepper Jack cheese

In saucepan over medium heat, saute onion in vegetable oil until softened, but not browned.

Add garlic, jalapeno, anaheim chilies and tomatoes and cook, stirring, about 2 minutes.

Stir in evaporated milk and bring to boil.

Remove from heat and stir in cheese.

Cover and let stand, stirring occasionaly, until melted, 8-10 minutes.

Serve with tortilla chips.
