Dixie Caviar.
2 cans of black-eyed peas, rinsed and drained
1 can yellow hominy, drained
2 medium tomatoes chopped (or use equivalent of Roma tomatoes)
1 medium green pepper, chopped
1 pickled jalepeno pepper, chopped
4 green onions, chopped
1/2 cup white onion, chopped
dash of garlic powder
chopped cilantro
8-ounce bottle of Italian dressing (can use fat-free)
Combine all and marinate overnight. Drain to serve.
Serve with tortilla chips
