FESTIVE FALL CHEESE BALL
Step One:
16 ounce extra sharp Cheddar cheese, grated
8 ounces cream cheese, softened
1/2 stick butter
4 tablespoons chopped crystallized ginger
1 bunch green onions, chopped with some green tops
1 tablespoon hot curry powder
1/2 teaspoon crushed red pepper
2 teaspoons paprika
3 tablespoons Amontillado sherry
Step Two:
1 bunch cilantro, finely chopped
Step Three:
Seeds from 1 pomegranate
Combine ingredients in step one in food processor and process until blended.
Turn out onto plastic wrap; cover and chill overnight.
Once firm, form into a ball and roll in the chopped cilantro.
Stud cheese ball generously with some pomegranate seeds.
Place cheese ball on a small platter encircled with the
remaining pomegranate seeds.
As an alternative, Festive Fall cheese ball is scrumptious served with
Cranberry Relish.
Mound it on top of the cheese ball or serve it on the side. May be made several days in advance.
