Feta Cheesecake with Herbed Tomato Sauce
(from Creative Ideas for Living)
3/4 cup fine dry bread crumbs
3/4 cup ground walnuts
1/2 tsp dried oregano leaves
1/3 cup butter or marg., melted
3 8 oz pkgs cream cheese, softened
12 oz feta cheese, crumbled
4 eggs
1/3 cup half and half
1/4 to 1/2 tsp hot sauce
Herbed Tomato Sauce:
1 clove garlic, crushed
1/4 cup chopped onion
2 Tbl olive oil
2 14 oz cans plum tomatoes, drained and chopped
1 bay leaf
1/2 tsp dried basil leaves
1/2 tsp dried oregano leaves
1/4 tsp salt
1/2 tsp fresh ground black pepper
Preheat oven to 300.
Combine breadcrumbs, ground walnuts and oregano; add butter; mix well.
Press evenly onto bottom of a 9-inch springform pan. Set aside
Beat cream cheese until fluffy in a large mixing bowl; add feta cheese,
beating until smooth.
Add eggs, one at a time, beating well after each. Stir in half and half
and hot sauce.
Pour
mixture into pan.
Bake for 1 hour, or until center is set. Cool 30 minutes on a rack.
Serve warm or cover and refrigerate until thoroughly chilled.
Remove side of pan; garnish with walnut halves if desired.
Serve with Tomato Sauce:
Saute garlic and onion in oil in heavy sauce pan until onion is tender.
Add remaining ingredients; simmer, uncovered, 25 to 30 minutes or until
most of liquid evaporates, stirring occasionally.
Remove bay leaf, serve warm.
