Bruschetta: Goat Cheese and Tomato Bruschetta

GOAT CHEESE AND TOMATO BRUSCHETTA

1 loaf(8 oz.) Italian bread or any crusty bread
1 pkg.(5 1/2 oz.) soft goat cheese, such as Montrachet
1 T. minced fresh oregano leaves
1/4 t. ground black pepper
2 ripe medium tomatoes, seeded and diced
1/2 t. salt
3 T. olive oil
2 T. minced fresh parsley leaves
2 lg. garlic cloves, each cut in half

Cut off ends from loaf of bread. Slice loaf diagonally into 1/2-inch-thick slices.

In a bowl, stir goat cheese, oregano, and pepper until blended. In another bowl, stir tomatoes with salt, 1 t. olive oil, and 1 T. parsley.

Place bread slices on grill over medium heat and cook 3 to 5 minutes on each side, until lightly toasted.

Brush one side of each toast slice with remaining olive oil and rub with cut side of garlic.

Just before serving, spread goat cheese mixture on toast slices and top with tomato mixture. Sprinkle with remaining parsley.

Makes about 16 bruschetta slices.
