Hummus

1 -2 C garbanzo beans(chick peas)
pinch of baking soda
1 tsp salt
reserved liquid from cooking the beans
1/2 C tahini
6-9 Tbsp fresh lemon juice
4-5 garlic cloves, minced

Cook beans in water with a pinch of baking soda, until very soft. Add water from time to time to keep beans covered.

Drain and reserve liquid and allow to cool.

Put beans in food processor with tahini, 5 Tbsp lemon juice and minced garlic.

Process in ulpses until a thick paste is formed. Add reserved liquid as needed until the right texture is achieved.

Taste and add more salt or lemon juice, if needed.
