Mexican: Chalupitas

Chalupitas

One package flour tortillas
oil for frying
1 can refried beans
1/2 pkg. taco seasoning
shredded Monterey Jack cheese
Guacamole


Let tortillas come to room temperature. Cut into quarters with scissors. Fry tortillas in 1/2 inch of oil (at about 375 degrees) until crisp. Remove and drain on absorbent paper.

Stir 1/2 pkg. of taco seasoning into refried beans, and heat in a saucepan. Place tortilla crisps on a baking sheet. Spread 1 tblsp. of beans on each tortilla, then sprinkle 1-2 tblps. cheese over each. Place under broiler and broil three inches from heat just until cheese melt, about 1 minute. Top with a dollop of guacamole. Serve hot.
