Recipe: Mexican Dip
Category: Appetizer (Mexican)
Servings: 8-10 (or 4 hungry people)

Ingredients:
1 8 oz. package regular or light cream cheese
1 medium sweet white onion, chopped fine
1/2 green pepper, chopped fine
1/2 red pepper, chopped fine (if red peppers are costly, a whole green pepper can be substituted)
1 8 oz. package Taco Blend cheese. Make sure it has spices in the blend.

Instructions:
Spread the softened cream cheese on a 8 inch plate or platter (microwave safe) until smoothed evenly--about one inch from the edge of the plate.

Sprinkle the chopped onion over the cream cheese evenly.

Do the same with the red and green pepper.

Spread the cheese blend over the top and put in the microwave oven until cheeses are melted and soft.

Serve with taco chips and salsa.

Reheat the dip in the microwave as it cools.
