Guacamole with Coriander

1/4 small onion, very finely chopped
2 hot green chilies, finely chopped
4 large sprigs coriander (or leaves only to taste)
1/4 teaspoon salt
2 avocadoes
1 large tomato (1/2 pound size), peeled and chopped

Grind or run through food processor, the onions, chilies, coriander, & salt until almost smooth.

Cut the avocados in half. Remove pit and mash.

When the avocado is mixed, stir in chopped tomato. Add onion/chilies/coriander mix and adjust the salt if necessary.

Variation: can top with sour cream or yogurt and thinly sliced green onion.
