Stuffed Mushrooms
24 lg fresh mushrooms
1/4 cup sliced green onion
1 clove garlic, minced
1/4 cup butter
2/3 cup fine dry bread crumbs
1/4 cup shredded cheddar
Wash and drain mushrooms. Remove stems. Reserve caps. Chop enough stems to make 1 cup.
In a medium saucepan cook stems, onion, and garlic in butter till tender. Stir in bread crumbs and cheese. You want the crumb mixture to come together well. Spoon into the mushroom caps. Arrange in a 15x10x1 inch baking pan.
Bake at 425 for 8-10 minutes. You can pull them out around 6 min and put them in the broiler to get a little crunchier on top. Make sure to drain the mushroom juice before serving or transporting.
