Rock Shrimp Mexicana Puffs

Rock Shrimp Mexicana Puffs

2 teaspoons olive oil
5 ounces rock shrimp or other small shrimp cooked, peeled,deveined and chopped very fine.

Chop all of the following and saute until tender:
1 cup onion
1/2 green bell pepper
1/2 yellow bell pepper
1/2 red bell pepper

Add and mix well the following ingredients:
1 teaspoon hot sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground cumin
1/8 teaspoon chili powder

When cool.. mix in:

1/4 cup mashed avocado
1/4 cup low-fat sour cream

Cut puffs in half and spoon mixture on top of puff and top off with other half of puff.
