TED PETERS SMOKED FISH SPREAD
2 c. finely chopped onion
1 c. finely chopped celery
1-1/2 c. sweet relish with pimento
1-1/2 qt. salad dressing (miracle whip)
3-1/2 qt. smoked fish
Mix all together and chill 2-3 days.
MULLET SPREAD
1 - 8 oz. pkg. cream cheese, softened
2 Tbsp. lemon juice
1 Tbsp. horseradish
1/4 tsp. salt
1/4 tsp. hot sauce
1 small onion, finely chopped
3/4 lb. smoked mullet
Combine first five ingredients in a medium bowl; stir in onion and mullet.
Cover and chill.
SMOKED FISH SPREAD
1-1/2 lb. smoked fish
1-1/4 c. mayonnaise
2 Tbsp. chopped sweet pickle
2 Tbsp. chopped parsley
1 Tbsp. mustard
2 tsp. minced onion
2 tsp. finely chopped celery
1 clove garlic, minced
Dash Worcestershire sauce
Flake fish. Combine with remaining ingredients. Mix well. Chill one hour.
Makes 3-1/2 c.
MULLET SPREAD
1 lb. smoked mullet
8 oz. cream cheese, softened
3 Tbsp. butter, softened
2 Tbsp. cognac
2 Tbsp. minced onion
1/4 tsp. Worcestershire sauce
1 Tbsp. lemon juice
Salt and pepper to taste
Puree fish, cheese, butter and cognac in a food processor. Add onion,
Worcestershire sauce and lemon juice. Pulse until combined.
Taste and correct with salt and pepper.
