Shrimp and Jarlsberg Cheesecake

2 cups soft breadcrumbs, toasted
1/4 cup butter or marg.,melted
1 small onion, minced
2 Tbl butter or marg., melted
1 clove garlic, minced
2 8 oz pkgs cream cheese, softened
4 eggs
1/2 cup mayonaise
1/3 cup whipping cream
3/4 lb. cooked shrimp, peeled and minced
1 1/4 cups Jarlsberg cheese, shredded (about 5 oz)
1/3 cup minced green bell peppers
1/3 cup minced red bell peppers or pimiento
1 Tbl minced chives
1 tsp white pepper
GARNISH:
peeled, cooked shrimp (optional)
pimiento cutouts (optional)
parsley (optional)
Preheat oven to 300.
Combine breadcrumbs and 1/4 cup butter; mix well. Press evenly onto
bottom and 1 1/2 inches up sides of a 9-inch springform pan. Chill
thoroughly.
Saute onion and garlic in 2 Tbl butter. Set aside.
Beat cream cheese until fluffy in a large mixing bowl; add eggs, one at
a time, beating well after each.
Gradually add mayonaise and cream, beating at low speed just until blended
Stir in remaining ingredients (not garnish) mixing well; pour into
prepared pan.
Bake for 1 hour and 20 to 30 minutes or until
set. Cool 1 hour on a rack.
Serve or cover and refrigerate until chilled. Garnish with shrimp,
pimiento and parsley if desired.
***NOTE***
3/4 pound cooked, minced lobster or 3/4 pound cooked, flaked crabmeat
may be substituted for shrimp.
