Spread Cheese Stuffed Pineapple by lj

CHEESE STUFFED PINEAPPLE

1 ripe pinapple
8 oz cream cheese
1/2 cup well aged cheddar, grated(i just used sharp)
1 TBS minced chives
1/4 tsp dry mustard
1 TBS white rum
1/4 tsp salt-optional

Cut off the top of the pineapple far enough down so that a wide rim is formed.

Scoop out the fruit and chop it fine and blend together cheeses, chives, 1 1/2 cup of the chopped pinapple, mustard, rum and salt.

Pile mixture into pinapple shell. Serve with tricuits, toast rounds or squares.
