Bacon & Tomato Potato Skins 
6 large baking potatoes 
2 tsp. cooking oil 
1 tsp. chili powder 
dash bottled hot pepper sauce 
2/3 cup Canadian style bacon - chopped 
1 tomato - finely chopped 
1 cup cheddar cheese - shredded 
1/2 cup sour cream 
2 T. green onion - thinly sliced 
Preheat oven to 450.
Scrub potatoes; prick with a fork. Arrange on a microwave safe plate. 
Microwave uncovered on 100% power (high)
for 17-22 min or until almost tender, rearranging once. Cool.
Quarter each potato lengthwise. Scoop out the inside of each potato half, 
leaving about a 1/4"thick shell (cover & chill
the potato insides for another use)
Combine oil, chili powder & hot pepper sauce. With a pastry brush, brush 
the insides of the potato pieces with the oil
mixture.
 Place on a baking sheet. Sprinkle potato pieces with bacon & tomato.
Top with cheese. Bake for 10-12 min or until cheese melts & potato pieces 
are heated through. 
Serve with sour cream & green onion.
