Black Bean Patties with Cilantro and Lime

2 tbls. oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 tbl. Minced jalapeno pepper
1 tsp. chili powder
1/2 tsp.dried oregano
1/2 tsp. Ground cumin
1/4 tsp. salt
2 cloves of garlic, minced
1 (16 oz.) can of black beans, undrained
1 1/2 cups dry bread crumbs
1/4 cup yellow corn meal
2 tbls. fresh minced Cilantro
1 tbl. Fresh lime juice
1/4 cup (1 oz.) Shredded Monterey Jack cheese

Heat oil in a skillet. Saute the next 9 ingredients (onion through garlic) until vegetables are tender. Add beans and heat for 1 minute; set aside.

Combine bread crumbs, cornmeal, cilantro and lime juice. Add bean mixture and blend.

Remove 1 cup of bean mixture and puree in food processor. Add puree bean mixture and cheese to remaining bean mixture and mix well.

Shape into patties and brown in skillet sprayed with Pam. Brown patties on both sides, approximately 3-4 minutes.

Serve with sour cream and salsa.
