Guacamole to Live For

1 large ripe tomato, cut into 1/8-inch dice
1 or 2 fresh serrano chiles, stemmed and finely chopped, to taste
1 clove garlic, minced
3 tablespoons chopped cilantro, plus a little for garnish
1 cup finely diced white onion, plus a little for garnish
3 large ripe avocados
2 to 3 teaspoons fresh lime juice
salt to taste
1 small jicama, peeled, sliced, and cut into wedges
1 cucumber, peeled and sliced into rounds or ovals
1 red, yellow, or green bell pepper, cut into 1-inch-wide diamonds


In a small bowl, combine tomato, chiles, garlic, and cilantro. Scoop the onion into a strainer, and rinse under cold water; shake to remove excess water, then add to the mixture.

Cut avocados in half, and scoop out flesh into a medium-size bowl. Mash with a large fork, leaving plenty of lumps. Stir in tomato mixture, lime juice, and salt. Garnish with cilantro and onion. Serve with jicama wedges, cucumber rounds, and bell pepper diamonds.
