Vegetable: Marinated Olives and Onions

Marinated Olives and Onions

1/4 Cup olive oil
2 Tbl. lime juice (1 lime)
2 Tbl. white wine vinegar
2 cloves garlic, minced
1 tsp. dried red pepper flakes
1 tsp. cumin (seed)
1-2 can(s) pitted olives, drained [black olives]
2 (3 oz.) jars pimiento-stuffed green olives, drained [Spanish olives]
1 (3 oz) jar almond-stuffed green olives, drained
2 (3 oz) jars cocktail onions, drained
3 Tbl. chopped fresh cilantro (optional)


Combine oil, lime juice, vinegar, garlic, red pepper flakes and cumin in medium saucepan. Bring to boil over medium-high heat. Remove and allow to cool. Stir in olives and onions (and cilantro). Transfer to air tight container. Chill overnight. Serve at room temperature. -Makes 4 cups

Note: Elizabeth generally use 2 cans of black olives, and omits the cilantro.
