Susanna's Broccoli Bites

4 cups raw broccoli, cleaned
1/2 sweet onion, chopped
1 cup shredded, cheese (cobly and the horseradish white cheddar cheese)*
2/3 cup mayo
1 egg
1/2 tsp nutmeg
salt and pepper to taste
Bread crumbs
Egg for breading

*(if you don't have the horseradish cheddar cheese use colby and cheddar and add about 4 or 5 Tbl. of Parmesean cheese).

Put broccoli in a bowl and add 1/2 cup water. Cover with plastic wrap and put in micro for 4 minutes to steam.

Put roughly chopped onion and broccoli in food processor and pulse to get texture but rather small pieces. Put in bowl and let cool down. Add mayo, cheeses, nutmeg, salt and pepper, egg and mix well. If you need more binding add a little more mayo.

Using a cookie scoop, or teaspoon, get a ball of mixture and dip in breadcrumbs and then egg and breadcrumbs again. It will stick better and make a better coating if you do it that way.

Deep fry carefully until golden brown. Serve with honey mustard or ranch dressing.

This does not work well if you freeze it and fry it frozen. It falls apart. But I have frozen them and let them thaw out and then deep fried them and it worked.
