Sweet Potato Rounds

3 Pounds Sweet Potatoes (Orange flesh kind) peeled and sliced 3/4 inch thick slices
Olive Oil
salt & pepper
sour cream garnish
chopped fresh chives garnish

Preheat oven to 375 degrees

Place sweet potato slices in plastic bag and toss with olive oil to coat Empty bag into a roasting pan. (Non stick pan provides deep carmelization) Sprinkle with salt & pepper. Roast one hour turning once.

Plate on serving dish with dark carmelization up. Top with a dollop of sour cream and garnish with chives.
